ARTICHOKE SOUP Recipe – Lectin Free Soup Recipes

Prebiotic and Fiber Rich Artichoke Soup. I’m so excited to share with you my new fantastic ARTICHOKE SOUP recipe. This artichoke soup Italian is silky and so truly delicious, even kids like it. If you have kids this soup is the best way to get them eat artichoke hearts.

Moreover, this amazing cream of artichoke soup can be served in 3 different ways.

First way You can serve with grain free chips and goat gouda cheese from trader joe’s, or any hard cheese as long as its made of goat or ships milk.

Second way with baked Shiitake mushrooms. Third way with gluten free pasta – millet pasta from big green brand or cassava pasta from Jovial brand – sold on amazon. So when you make this soup – each day serve it differently as I show in the video.

Jerusalem artichoke recipe is simple to make and ready to serve in just 15 minutes.

I recommend you keep frozen artichoke hearts from trader Joe’s in your freezer, as they are so convenient to use. The artichokes in soup can be stored in fridge up to 4 days.

How to make Artichoke Soup Delicious?

In this artichoke soup recipe, you will learn how to make delicious Lectin-free Gluten-free artichoke soup, it is vegan.

This recipe of artichoke soup  is so easy, you will need  just 5 simple ingredients – frozen hearts of artichoke from Trader Joe’s, leeks, garlic, red onion, and Brussels sprouts.


List of Ingredients for Artichoke Soup Italian 

  • 4 Table Spoons of Olive oil
  • 5 cloves of Garlic
  • 1 Stalk of Leeks
  • 1 Cup of Red Onion
  • 1 1/2 Cups of Frozen Hearts of Artichokes
  • 1 Cup of organic Brussel Sprouts
  • 1 Cup of organic parsley + seasoning
  • 2 1/4 teaspoons of iodized sea salt
  • 1 teaspoon of black pepper
  • 1/2 teaspoon of ground nutmeg
  • and 2 dashes of cayenne-optional


Directions of Artichoke Soup Recipe


Step 1. Combine in Pan

Combine the olive oil, garlic, leeks, red onions, and Brussels sprouts in a pan.


Step 2. add the water

Add 5 cups of water to the pan. Once it starts boiling, then boil it for only 10 min.


Step 3. start seasoning

After 10 minutes of boiling, turn off the stove and start seasoning with 2 1/4 teaspoons of iodized sea salt, 1 teaspoon of black pepper, 1/2 teaspoon of ground nutmeg, and 2 dashes of cayenne-optional as per taste requirement.


Step 4. add the parsley

Add 1 cup of parsley to the mixture. This soup is ready to serve.

1st way
