Baked Wild Salmon With Sorghum Grain (Lectin Free Dinner Recipe)

Lectin-free dinner recipe like Baked Wild Salmon with sorghum grain and broccoli is a delicious nutrient rich satisfying and super easy dish. Garnished with Italian tomato sauce garlic dill and sesame seeds (lectin-free dinner recipe).

The super-delicious Baked Wild Salmon is a unique and lighter dinner idea for all, you can also serve this once you have guests over, because this dish looks very attractive.

Sorghum is a great source of multiple vitamins like vitamin B1 (thiamin) and vitamin B6. in addition, sorghum grain has many other micronutrients and macronutrients. A list of rich minerals is below.

Furthermore, the Wild caught salmon is a good source of, Omega 3 Fatty acids and many other healthier nutrients.

 

Ingredients of Lectin Gluten Free Dinner Recipe

Wild-caught Alaskan salmon most of the wild-caught Alaskan salmons are dry. But this brand that I show in the video from whole foods is the best so far.

However, you can also use any wild-caught fish in this dish.

  • 1 cup of sorghum grain – ( this makes a portion for 5 individuals)
  • 2 cups of steamed or 5 min boiled broccoli
  • 1 teaspoon of iodized sea salt
  • 4 tablespoons of extra virgin olive oil
  • Juice of 1/2 large lemon or 1 small lemon
  • 1 clove of fresh garlic
  • 3-4 tablespoons of Italian tomato sauce
  • 2 tablespoons of chopped organic dill or herbs of your choice
  • 1 tea spoon of sesame seeds

Cooking Direction of Baked Wild Salmon

Step 1. Cook the sorghum

Cook sorghum as it says on the packaging and I cook it for 60 min. You need to follow the packaging guideline for better results. If you have pressure cooker it take way less time to cook it.

Step 2. Wild Caught Salmon Seasoning and Baking

Once sorghum is halfway cooked, then rinse   wild-caught salmon In water and season it with olive oil, iodized sea salt and  black pepper. Now, put it into oven and bake it as per packaging instructions.

I bake salmon for 30 min @350

Step 3. Cut The Broccoli

Once salmon is in the oven, then cut 2 cups of broccoli into small pieces. Now boil it for 5 min only and put aside.

Step 4. Transfer Sorghum And Broccoli into one pan

Once sorghum is boiled then rinse it well to wash away any dirt and drain it. After that transfer sorghum and broccoli into a pan on medium – low heat to just warm it up.

 

Seasoning Sorghum Grain and Broccoli 

Season it with 1 teaspoon of iodized sea salt, 4 tablespoons of olive oil, and fresh lemon juice. Mix well in the pan and serve it.

Serve it beautifully place salmon and top of sorghum and garnish with tomato sauce garlic and herbs

you can warm up Italian tomato sauce.
