Healthy Crunchy Delicious Granola
lectin-free breakfasts are as amazing as a parfait – for vegans with coconut yogurt. For the non-vegans sheep and goats, milk yogurts are available. The recipe is also delicious with cacao drink or just use your favorite compliant milk.
Recipe of Lectin-Free Granola Fruit Parfait
For parfait please use granola with organic berries and in season only, I love to use organic blackberries because of a high amount of polyphenols also black berries are great for brain health.
However, It is also great with pomegranates and pomegranates blackberries blueberries raspberry is rich In polyphenols.
Recipe – Best Granola for Yogurt Parfait
- Put all ingredients together in the blender
- 1 cup of walnuts
- 1 cup pistachios (i get mine at trader joe’s)
- 2 tablespoons of MCT oil or coconut oil.
- 2 tablespoons of cacao powder (non-alkalized)
- 2 tablespoons of pure vanilla extract
- 7 or 8 tablespoons of natural sweetener swerve (you can first add 7 tablespoons and once blended taste it – if need more sweetener add more)
- 1 teaspoon of cinnamon
- 1/4 or 1/2 teaspoon of nutmeg and blend-pulse 5 seconds 3-4 times only, it must be crunchy then pour the mixture into a big bowl
- Now, add 1 1/2 cup of unsweetened coconut flakes and mix well
- line parchment paper on the baking sheet
- pour the mixture, even nicely with a spoon and bake for 10 min @ 300
- Now, take it out mix it well, and put it back for 15 min
- let it cook completely and then serve.
