Hello Friends! I would love to share with you fantastic QUICK & EASY  delicious 8 minute lectin free recipe for 2022.

My lectin-free recipes mainly focus on polyphenol rich salads, because polyphenols the micronutrients protect our cells from free radicals and those are staple for wellness and healthy lifestyle – polyphenols are super important for our health and well being

The salad recipe is really very delicious, and easy to make as it takes only 8 minutes to make!

Now, here it’s important to tell you about the polyphenols.

Why i am obsessed with  polyphenol rich food? 
Because polyphenols are the micronutrients found in certain plants, and these nutrients are natural energy boosters. In addition, these micronutrients offer a unique healing option for the body as well.

Polyphenols keep the blood vessels healthy and promote excellent circulation in the body. It’s interesting to note that polyphenols feed good gut bacteria which is very important.

  • Dark-colored vegetable

  • Dark chocolate 72% and greater
  • Blueberries, blackberries any dark skin berries
  • Non-alkalized cacao powder

A wonderful Recipe for Polyphenols Rich Salad

For one serving:

Put all ingredients together in one bowl and mix, very easy to make takes about 8 mins

  1. Less than half of the red onion cut into small pieces
  2. 3 Brazil nuts cut into small pieces.
  3. 1/2 of avocado-cut it into small pieces
  4. 3/4 cup of organic arugula- or dark leafy greens of your choice.
  5. 8 Olives of your choice
  6. 2 Tbl Spoon of pomegranate Seeds.
  7. Juice of 1/2 lemon

SEASONING:

  1. Iodized Sea salt to taste.
  2. 2 tablespoons of extra virgin olive oil.

Please note:

Always use high-quality extra virgin olive oil that has harvest day, one year of pressing on the bottle and it has to be in a dark-colored glass, olive oil should have greenish color rather than yellowish.

3.1 tablespoon of red wine vinegar.

Important note

Goat cheese goes very well with this salad (Trader Joe’s has the best goat cheeses) you can sprinkle it on top.

NOTE OPTIONAL – Dry unsweetened prunes or tart cherries one tbl spoon cut thinly GOES VERY WELL with this salad , make sure prunes and tart cherries has no sugar added and no chemicals please read the label, it should have only one ingredient “dry prunes”
