This Sweet potato recipe with eggs and feta cheese is one of my favorite recipes that I have created. Would you like something hot satisfying and delicious? try this fantastic oven baked sweet potato meal recipe.

Very easy to make and most importantly it requires only 3 ingredients and just a few minutes to serve the super delicious dish! An easy-to-make super delicious and healthy BREAKFAST LUNCH OR DINNER recipe that will be super surprising for your friends and family 🙂

Oven Baked Sweet Potato Ingredients

Please use Pasteurized eggs or Omega 3 eggs and Sheep’s or Goat’s Milk Feta Cheese

Because of Eggs it is also protein rich and because of cheese it is calcium rich.
For serving please use high quality extra virgin olive oil, in dark glass bottle, on the bottle pay attention to have 1 year of pressing and color of olive oil should be greenish color not yellow  and please use iodized sea salt.

This recipe is perfect if you came home tired and don’t want to spend too much time cooking, you can also have sweet potatoes backed on Sunday’s and then you can just reheat them and make eggs, per Doctor Gundry this way when you reheat sweet potatoes you get more resistant starches from sweet potato’s which your good gut bacterias will love, so cooked and reheated sweet potatoes are more healthier for you gut health.

This serving is for  1-person

  • Medium Size Sweet potato
  • 1-2 eggs
  • Extra Virgin Olive oil
  • Iodized sea salt
  • Ship milk feta cheese- (I use trader joe’s or Cosco Dodoni brand for this recipe).

How to Make Sweet Potato Recipe

  • Bake the sweet potato- Bake Sweet potato from 45-50 min @ 350  till very soft.
  • Once Potato is baked make scrambled eggs – your choice 1 or 2 eggs – (Eggs must be pasture-raised or omega 3 eggs, cook on low heat).
  • Cut sweet potato into halves – season with olive oil and iodized sea salt, add scrambled eggs, and top it with sheep’s milk feta cheese – (i get mine in trader joe’s, i love their cheeses )
  • Serve hot

Important note

Sweet potato should washed well be baked until very soft.
