It Is Simply SO DELICIOUS – The combination of sweet potato arugula leafy greens unsweetened cranberries walnuts lemon juice, lemon zest olive oil makes this salad very flavorful , Polyphenol rich and so good for you
Once sweet potato is ready it takes only 5 minutes to make this salad , just cut the sweet potato and mix it with the rest of the ingredients
You can bake or boil sweet potatoes on Sundays and keep them in airtight container in fridge up to 4 to 5 days, so you could make this salad any day of the week in minutes
There are 2 reasons why this salad is good for your health
First – reason Because of polyphenol content in in olive oil, sweet potato, walnuts, lemon zest arugula and cranberries

Ingredients for sweet potato salad:
Serving for 2
1) 1 large sweet potato – boiled or baked
2) 1 ½ cup of organic Spring mix
3) 1 cup of organic Arugula
4) 1/2 tea spoon of iodized sea salt – salt to taste
4) Zest of 1 organic lemon
5) Juice of 1 organic lemon – (use normal size, if it is extra-large then use half of lemon juice)
6) 4 tbsp of extra virgin olive oil
7) 5 tbs of chopped walnut (for garnish)
8) 2 tbs of unsweetened cranberries (if it is hard to find for you unsweetened cranberries , use 3 prunes instead, thinly cut, but read label it should have only one ingredient dry prunes and no sugar no chemicals added IMPORTANT)
Method of Cooking Leafy Green Sweet Potato Salad:
Step 1
Boil or bake sweet potato, let it cool and cut into small pcs
Step 2
Combine in one big bowl Sweet potatoes, leafy greens, iodized sea salt, lemon zest, lemon juice, extra virgin olive oil and mix it very well
Step 3
Sprinkle your salad with chopped walnuts and unsweetened cranberries and serve it
