Lectin Free Walnut Pastry Recipe – Gluten Free Baking

This Walnut Pastry is a great choice to bake if you have guests over, or you or your kids desire some pastry

It is fantastic with coffee or cacao, with coconut or sheep’s or goat milk yogurts, or just by itself

What i love about lectin free lifestyle that you have so many delicious alternatives that you don’t feel like you are on a diet – diet is an old school, and to be honest lectin free food and pastry is more delicious to me

Today, I came up with an idea to prepare  Lectin Gluten Free Walnut Pastry – and i would love to share it with you my dear friends.

You can get pasture raised eggs, walnuts, blanched almond flour, french butter, organic lemons and ground cinnamon at my favorite Trader Joe’s. Ingredients like Coconut flour, Arrowroot starch swerve natural sweetener you can get at whole foods.

 

This Lectin Free Walnut Pastry is Very Easy to Make 

  • No need to have any skills in baking
  • Just combine all ingredients on one big bowl mix with with hand mixer and bake

in the video i used pecans – RECENTLY IT WAS ANNOUNCED THAT PECANS NOT COMPLIANT ANYMORE IT HAS LECTINS – PLEASE USE WALNUTS

In the video I mention about New Zealand butter from Trader Joe’s – it is NOT compliant , I  found out recently that cows in New Zealand are A1 – PLEASE USE FRENCH BUTTER from trader Joe’s i love that french butter !

Ingredients of Best Lectin Free Walnut Pastry:

  • 5 pasture raised Eggs
  • Swerve sweetener 3/4 cups
  • European butter 1 stick
  • Ground cinnamon 1 tea spoon
  • Baking soda 1 1/2 tea spoon
  • Blenched Almond flour 1 1/2 cup
  • Coconut flour 1/2 cup
  • Arrowroot starch 2 table spoon
  • Juice of 1 lemon
  • Zest of 1 organic lemon
  • 6 table spoons of walnuts

 

Method of Baking Walnut Pastry Recipe:

Step# 1

Beat the 5 eggs make it fluffy, add ¾ cups of swerve sweetener, European – french butter, ground cinnamon, baking soda, lemon zest lemon juice, coconut flour, almond flour, arrowroot starch, mix well with mixer, and at the end add walnuts cut into small pcs

Step# 2

Transfer dough to the the baking sheet covered with parchment paper and flatten with spoon and then flatten with wetted hand and sprinkle with 6 table spoon of walnuts

Step# 3

Bake @ 350 for 25 min or little more – until it gets little golden color. Let it completely cool off and then dust it with Swerve Sweetener Confectioner – Cut into small squares and serve 🙂 enjoy!!
